Maple Granola

Granola is super easy to make and soooo good! Maybe a little bit addictive...

Maple Granola... on top of fresh fruit with more maple syrup! It's pretty dangerous buying bulk cans of maple syrup... but it sure is yummy!

3 Cups rolled oats (if you need GF ones, make sure the package says GF)
1/2 Cup Pumpkin seeds (or sunflower)
1/2 Cup Chopped Almonds
1/2 Cup Chopped Cashews or other nut
1/4 Cup Uncooked millet
1/3 Cup Shredded unsweetened coconut
1/2 Cup Maple syrup
1/3 Cup Melted coconut oil
1 tsp Vanilla
1 tsp ground cinnamon
1/2 tsp salt
1 Cup mixed dried fruit (anything you want: dried apples, cranberries, goji berries, raisins...)

Mix together the oats, seeds, nuts, and millet in a large bowl.
In another bowl, stir together the maple syrup, oil, and vanilla. Pour this all over the oat mixture and stir it all around really well then add in the cinnamon and salt.
Pour into your baking sheet (maybe line that with some parchment paper) then put it in a 300degree oven for 45 minutes. Stir it every 15 minutes so that it cooks evenly. You'll know it's done when everything looks kinda toasted and the oats feel crispy. Once the granola is out of the oven then stir in the dried fruit.
Once it's cooled down and you've stopped shoving it in your mouth, you can put it in an air tight container for a couple weeks.
